Rye Toasts with Goat Cheese and Scrambled Eggs

The Best Toast for breakfast preparation method

  1. Prepare the Ingredients:

    • Rye Bread: Use malted barley rye bread. Slice it into thick pieces.

    • Goat Cheese: Choose a soft, creamy goat cheese.

    • Eggs: Use two organic farm eggs.

    • Greens: Select fresh greens such as arugula, spinach, or mixed salad greens.

  2. Toast the Rye Bread:

    • Heat a grill pan or a regular pan over medium heat.

    • Lightly butter each side of the rye bread slices.

    • Place the slices on the pan and toast until they are golden brown and crispy on both sides. This should take about 2-3 minutes per side.

  3. Scramble the Eggs:

    • Whisk the Eggs: Crack the organic eggs into a bowl and whisk them until the yolks and whites are fully combined. This will give us that silky texture we’re aiming for.

    • Heat the Pan: Heat a non-stick pan over medium-low heat and add a small amount of butter. Let it melt and coat the pan evenly.

    • Cook the Eggs: Pour in the whisked eggs. Now, here’s the key: cook them gently. Stir continuously with a spatula, making sure to scrape the bottom of the pan. This will help us achieve that creamy texture.

    • Finish Cooking: Just before the eggs are fully set, remove them from the heat. The residual heat will finish cooking the eggs without overcooking them.

  4. Assemble the Rye Toasts:

    • Spread the Goat Cheese: Generously spread the soft goat cheese on the toasted rye bread.

    • Add the Scrambled Eggs: Spoon the scrambled eggs over the goat cheese.

    • Top with Greens: Add a handful of fresh greens on top of the scrambled eggs for a crisp, refreshing contrast.

  5. Serve and Enjoy:

    • Place the assembled rye toasts on a serving plate.

    • Optionally, garnish with a sprinkle of freshly ground black pepper or a drizzle of olive oil for extra flavor.
