Cottage Cheese Gnocchi with Pecorino and Pear

Preparation Method

  1. Prepare the Ingredients:

    • Cottage Cheese: 400 grams (a mix of sheep and goat cottage cheese)

    • Flour: 100 grams of all-purpose flour

    • Eggs: 2 large eggs

    • Sugar: 2 tablespoons

    • Pecorino Cheese: 50 grams, grated

    • Sour Cream: For serving

    • Pear: 1 fresh pear, thinly sliced

  2. Make the Gnocchi Dough:

    • Combine Ingredients: In a large bowl, mix the 400 grams of cottage cheese, 100 grams of flour, 2 large eggs, and 2 tablespoons of sugar until a smooth dough forms. The dough should be soft but not too sticky.

    • Shape the Gnocchi: On a floured surface, roll the dough into long ropes about 1 cm in diameter. Cut the ropes into small pieces to form the gnocchi.

  3. Cook the Gnocchi:

    • Boil Water: Bring a large pot of salted water to a boil.

    • Cook the Gnocchi: Add the gnocchi to the boiling water. They are done when they float to the surface, which should take about 2-3 minutes. Remove with a slotted spoon and set aside.

  4. Prepare the Pear Slices:

    • Wash and Slice: Wash the fresh pear and thinly slice it.

  5. Serve the Gnocchi:

    • Plate the Gnocchi: Place the cooked gnocchi on a serving plate.

    • Add Pecorino Cheese: Sprinkle the grated Pecorino cheese over the gnocchi.

    • Add Sour Cream: Spoon a generous amount of sour cream over the gnocchi.

    • Garnish with Pear Slices: Arrange the fresh pear slices around the gnocchi for a sweet, juicy contrast.
