We respect what and how we cook, our dishes reflect us in some way and we want those reflections to be clear and honest ones.

We promote gender equality in the restaurant industry

We know that women face many challenges in this sector, such as sexual harassment, pay gap, lack of representation, and limited access to capital and opportunities . That is why we created a women-led restaurant, where 80% of our staff are women. This is three times the average in the restaurant industry.

We improve our neighborhood

We chose to open our restaurant in a quiet and friendly area, instead of a crowded and expensive city center. However, the place was dirty and gloomy when we found it. We decided to invest in our restaurant's design, the outdoor space, and the accessibility for people with disabilities. We believe that small changes can make a big difference in the quality of life of our community.

We support local farmers

We want to offer fresh and healthy food to our customers, while supporting the local economy and the environment.

That is why we buy our ingredients from the farmers market, where we can find a variety of organic and seasonal products. We also bake our own sourdough bread with organic flour from a local mill in Cadiz, which gives it a delicious flavor and texture.

We consider the income disparity in our community

We are aware that not everyone can afford our sourdough bread, even though it is one of our specialties.

That is why we offer a 50% discount every morning from 8:00 to 10:00 to local retirees and people who serve our society (teachers, healthcare workers, firefighters, police officers, etc.).

We use green energy

We believe that using renewable energy is essential for our artisanal business philosophy, as well as for the planet.

We constantly invest in increasing the percentage of green energy in our consumption. and we just installed modern solar panels as our window awnings, which will reduce energy loss from unnecessary air conditioning and increase our renewable energy production.

Currently, green energy accounts for at least 40% of our consumption, thanks to our partnership with “Mariposa Energia”, a local green energy provider.

We also care about water consumption and use condensed water from air-conditioning for our garden drip irrigation system.

We implement a zero-food waste policy

We have implemented some special processes in our food production to avoid wasting food. For example, we use bread leftovers to make crackers (which we use in many of our dishes), and tomato leftovers to make tomato sauce for our pizzas. We also cooperate with the "Too Good to Go" service (you can find us in their app) to sell our unsold desserts and pastries at a lower price. Of course, we also donate any remaining food to people in need.

We grow greens in our small garden

We grow a variety of microgreens and spices in our small garden, which helps us reduce our carbon footprint and enjoy their fresh flavor. (Our neighbors also love to pick peppers from our Schinus molle tree.) Just not long ago were delighted to see some bees pollinating our flowering rosemary. What a joy!
